Follow #GordonRamsay: http://www.instagram.com/Gordongram http://www.tiktok.com/@GordonRamsayOfficial http://www.facebook.com/GordonRamsay http://www.twitter.com/GordonRamsay #hexcladpartner *Recipe* Popcorn Shrimp Makes 4 servings Ingredients: 1 ½ lb raw shrimp, peeled and deveined ¾ cup buttermilk 1 ½ cups rice flour 1 ½ cups corn starch 1 tablespoon kosher salt 2 teaspoons ground black pepper Canola oil or vegetable oil for deep frying Spicy mayonnaise 1 cup mayonnaise ¼ cup white miso paste ¼ cup sriracha 1 tablespoon sorghum syrup or agave syrup Juice of 1 lime Popcorn Furikake 2 teaspoons canola oil ½ cup wholegrain sorghum ¼ cup bonito flakes 2 sheet nori seaweed, toasted 2 tablespoons toasted sesame seeds 1 teaspoon red pepper flakes 1 teaspoon togarashi seasoning 2 teaspoons flaked sea salt Garnish: Lime cheeks Method: • Combine the shrimp, buttermilk, salt and pepper in a bowl and toss to coat. Shake off any excess. • Combine the rice flour and corn starch in a large bowl. Add the shrimp, toss to coat then transfer to a large sieve to shake off the excess flour. • Whisk together the spicy mayonnaise ingredients together in a large bowl. • Heat the oil for deep frying to 350ºF. Fry the shrimp in batches for 50-60 seconds until golden and crisp. • Drain, then tip into a bowl and toss in spicy mayonnaise. Dust with the popcorn furikake and serve with lime cheeks. Popcorn Furikake • Heat the oil in a large saucepan over a medium-high heat. Add the sorghum and cover with a lid. Cook for 2-3 minutes until the popping stops, then remove from the heat and leave to cool. • Pulse the bonito flakes and nori sheets in a food processor to a fine crumb, then add the remaining ingredients and pulse again to combine. Combine the sauce ingredients in a bowl and season to taste. Add the lobster and toss to coat. • Warm the potato chips in the oven for 5 minutes. Put the chips into a large bowl, shake over the Old Bay Seasoning, and toss to coat. • Heat the butter in a non-stick skillet until foaming. Then toast the cut sides of the buns for 1-2 minutes until golden and crisp. • Divide the lettuce leaves between the rolls and spoon the lobster in. Watch it on Hulu here: http://hulu.com/series/next-level-chef Sponsored by I Can't Believe It's Not Butter #hexcladpartner *Recipe* For the steak: 4 x 5 oz cube steaks, pounded to ⅓ inch thickness 1 ½ cups buttermilk 4 teaspoons salt 1 tablespoon ground black pepper 1 teaspoon cayenne pepper For the dredge: 1 ½ cups all-purpose flour 1 ½ cups cornstarch 2 teaspoons baking powder 2 teaspoons salt 2 teaspoons ground black pepper Canola oil for deep frying For the mushroom gravy 2 tablespoons butter 1 cup mushrooms, sliced 3 tablespoons canola oil 3 tbsp AP flour 1 cup beef stock 1 cup milk 2 teaspoons soy sauce 2 sprigs thyme ¼ cup heavy cream To serve: Mashed potatoes (see recipe below) Green beans almondine (see recipe below) Method: • For the steak, whisk the buttermilk, salt, pepper and cayenne together in a large bowl. Submerge the steam in the brine, cover, and refrigerate for at least 1 hour or up to 24 hours. • Set a wire rack on a rimmed baking sheet. Whisk the flour, cornstarch, baking powder, salt and pepper together in a large bowl. Working with 1 piece of steak at a time, remove steak from brine and transfer to flour mixture. Turn to coat, pressing firmly on the coating to adhere. Transfer the steak to the prepared wire rack. • Heat the oil for deep frying to 375 degrees. Fry for 5-6 minutes until golden, then drain. For the mushroom gravy: • Heat the butter in a large skillet until foaming, add the mushrooms and fry until golden brown. Remove from the pan and set aside. • Put the oil and butter into the same pan, and cook for 4-5 minutes until a deep brown colour. Whisk in the beef stock, milk , soy sauced and thyme and bring to a simmer. Cook for 2-3 minutes then stir in the mushrooms and cream. Remove the thyme and season to taste. For the green beans: 2 tablespoons butter 1 pound green beans, trimmed, blanched and refreshed ¼ cup flaked almonds Juice of half a lemon Salt and pepper Method: • Heat the butter in a skillet until foaming, add the green beans and almonds and cook for 3-4 minutes until the almonds are golden. Add lemon juice, salt and pepper to taste. Combine the sauce ingredients in a bowl and season to taste. Add the lobster and toss to coat. • Warm the potato chips in the oven for 5 minutes. Put the chips into a large bowl, shake over the Old Bay Seasoning, and toss to coat. • Heat the butter in a non-stick skillet until foaming. Then toast the cut sides of the buns for 1-2 minutes until golden and crisp. • Divide the lettuce leaves between the rolls and spoon the lobster in. Watch it on Hulu here: http://hulu.com/series/next-level-chef Sponsored by I Can't Believe It's Not Butter! *Recipe* Loaded Tater Tot Nachos Makes 4 servings Ingredients: For the pulled pork: ¼ cup dark brown sugar 1 tablespoon salt 2 teaspoons smoked paprika 1 teaspoon ground cumin 1 teaspoon ground black pepper 1 teaspoon ground coriander 6 pound piece boneless pork shoulder, skin off Canola oil 1 cup chicken stock For the chipotle bbq sauce: 1 cup cola ½ cup ketchup ½ cup apple cider vinegar 1 tablespoon chipotle paste 1 tablespoon dark soy sauce Remaining spice blend For the queso: 1 pound sharp cheddar, shredded 2 tsp cornstarch 12 oz can evaporated milk Pinch cayenne pepper For the tater tots: 2 pounds frozen tater tots Canola oil for deep frying To serve: Pickled jalapeños Small bunch cilantro, chopped Method: For the pulled pork: Preheat the oven to 300F. Combine the sugar, salt and spices in a small bowl. Coat the pork all over in half of the spice rub. Heat a little oil in a cast iron Dutch oven, add the pork and brown all over. Pour in the chicken stock, cover with a lid and transfer to the oven for 4 hours until tender. Leave to rest for 20 minutes then shred. For the chipotle bbq sauce: Combine all of the ingredients in a saucepan, bring to the boil then reduce the heat to a simmer and cook for 15 minutes until glossy. Leave to cool then transfer to a squeeze bottle. For the queso: Toss the cheese in cornstarch until well coated. Put the cheeses, evaporated milk and cayenne pepper into a sauce pan and melt gently until smooth. For the tater tots: Preheat the oil for deep frying to 350F. Fry the tater tots for 3-4 minutes until crisp, then drain and season with salt. To assemble: Arrange the tater tots on a serving plate. Toss the pork with a little of the bbq sauce then arrange over the top of the tater tots. Drizzle with more of the bbq sauce and the queso, then garnish with jalapeños and cilantro. *Prep list:* • 1 x cooked pork - not shredded • 1 x finished and cooled chipotle bbq sauce • Test queso in advance The home of Gordon Ramsay on YouTube. Begin by mixing bread crumbs, smoke paprika, onion and garlic powder, oregano in a bag Season the mayonnaise and spread a thin layer on all sides of the pork chop. Holding the bone place in the bag and shake vigorously to coat the pork completely Add pork chop to the oil and cook both sides until golden brown. Remove pork chop from oil and set aside on the rack. Reserve pan *For the potatoes:* Add oil to a pan, pan roast the potatoes to golden brown on all sides. Season with salt and pepper. Add in the scallion batons and saute until tender. Finish potatoes with butter, fresh parsley, chives *For the apples:* To the pan used to cook the pork chop, add in 2 tablespoons of butter to melt in pan. Add in apples and caramelize until golden brown. Deglaze pan with apple cider and reduce by half. Add in the chicken stock and cider vinegar and reduce by half again.
